Very easy moussaka, quick to cook

Ingredients
  • 500g minced lamb
  • large onion
  • 2 garlic cloves
  • 400g chopped tomatoes
  • 2tbsp tomato puree
  • aubergine
  • 200g feta cheese
  • 3tbsp fresh mint

Directions
  1. Slice the aubergine, baste with oil and grill.
  2. Fry the chopped onion and garlic, then the lamb.
  3. Add all ingredients and simmer for 10 mins.
  4. Remove from heat, stir in the feta cheese and serve.
