This dish is perfect for cold season a little bit sour can cook for lunch or dinner. This is also a filipino's favorite soup. Also can replace the beef with pork.

Ingredients
  • 1 kilo Beef ribs
  • 5 cups water
  • 4 pieces tomato , sliced
  • 1 onion, sliced,
  • 3 unriped sampalok (tamarind fruit) (alternate ingredients – sinigang sa sampalok mix powder put until desired taste a little sour)
  • 3 pieces gabi (taro fruit), peeled and halved
  • 1 bundle sitaw (string beans), cut into 2 inch lengths
  • 2 pcs talong (eggplant) cut into small halves
  • 3 pcs. okra (lady’s fingers) cut into halves
  • 1 kangkong (water spinach) leaves (optional)
  • salt or patis to taste
  • add some seasoning to enhance more taste (msg) optional

Directions
  1. In a pot, boil beef in water for 1-2 hours or until tendered. Put salt to taste. Saute tomatoes, onions. Mix it with boiled beef, add sampalok, After a few minutes remove tamarind. Mash and strain the juice. then add the juice of tamarind to the pot. Add gabi, when slightly tender add the sitaw and kangkong stalks. Add eggplant and lady finger. Season to taste. Lastly, add the kangkong leaves.
