Avocado Orange Salsa Recipe

Ingredients

1 1/2 pounds oranges

2 avocados (about 1 pound total)

1 cup English cucumber diced in 1/4 inch pieces

1/2 cup minced red onion

2 tablespoons lime juice

1 teaspoon chipotle chile puree (puree canned chipotles, it's that easy!)

salt to taste

Directions

Cut ends off oranges, then cut off peels and outer membranes and discard.

Slice oranges 1/2 inch thick and then into cubes, discard seeds. Place oranges into bowl.

Pit, peel and dice avocados and add to oranges. Add cucumber, onion, lime jice and chipotle puree, adding salt to taste.

It's hard to say how many servings...because it depends on how you use it. Could be used as appetizer (dip) or a side, or compliment to fish...and I would probably just take the whole bowl full and a spoon and go hide.
