Campfire Cinnamon Twirls

- 1/4 cup (1 3/4 ounces) sugar shopping list
- 1/4 cup (1 1/4 ounces) Baker's Special dry milk or nonfat dry milk shopping list
- 3 tablespoons whole dried eggs shopping list
- 1 teaspoon salt shopping list
- 3 cups (12 3/4 ounces) King Arthur Unbleached all-purpose flour shopping list
- 1/4 cup (1 5/8 ounces) potato flour (optional) shopping list
- 2 1/2 teaspoons instant yeast shopping list
- 1 teaspoon sweet dough flavor or 1 teaspoon butter-vanilla flavor powder shopping list
- 1 cup + 2 tablespoons (9 ounces) water shopping list
- 1/4 cup (1/2 stic, 2 ounces) unsalted butter or oil shopping list
- 1 cup (6 ounces) cinnamon chips shopping list
How to make it
- Topping
- 1/4 cup (1/2 stick, 2 ounces) unsalted butter, melted
- 1/2 cup (3 1/2 ounces) sugar mixed with 1 tablespoon cinnamon
- Dough: In a large bowl mix together all the dry ingredients, except the cinnamon chips. Place this mixture in a gallon-sized plastic bag, and take it with you to your campsite.
- Several hours before you want to eat the twirls, pour the dry ingredients into a bowl, mix with the water and butter or oil, and knead to make a smooth, elastic dough. Add the cinnamon chips near the end. Grease the inside of the bag in which you had the dry ingredients, place the dough in it, seal it partway, and allow it to rise for 1 to 2 hours, until doubled in size.
- Divide the dough into 12 pieces, and roll each piece into a 12-inch log. Strip the bark off the last 5 to 6 inches of 12 sturdy sticks, each about 2 to 3 feet in length. Spiral the dough around the cleaned-off top of the sticks, twirling from top to bottom. Set the sticks aside, and let the dough rise for about 30 minutes; if the air is very dry, sprinkle the twirls gently with water to prevent the dough from forming a crust.
- Toast the dough over the campfire until lightly browned, turning often -- this will take about 15 to 20 minutes, depending on the heat of the fire.
- Before eating, brush the twirls with the butter and sprinkle with the cinnamon-sugar. Yield: 12 cinnamon twirls.
