How to make it

  • Heat oven to 180, and grease/line the loaf tin.
  • Soften the butter slightly (don't melt it).
  • Cream the butter with the sugar with an electric whisk (I use my mixer) until fluffy.
  • Add the eggs, one at a time.
  • Add the sour cream and ensure it is well mixed.
  • Sift the flour and baking powder, then add to the mix.
  • (Next time I will try adding a handful of chocolate chips to the mix at this point).
  • Spoon into the tin and bake for 45-60 mins, testing with a skewer towards the end.
  • Make a simple, thin icing by mixing the icing sugar with a small amount of warm water. Make just enough to cover the top with perhaps a dribble down the side.
