Sponge Loaf

- 200g butter shopping list
- 250g caster sugar shopping list
- 2 large eggs shopping list
- 200ml sour cream shopping list
- 300g plain flour shopping list
- 3 teaspoons baking poweder shopping list
- 150g icing sugar shopping list
How to make it
- Heat oven to 180, and grease/line the loaf tin.
- Soften the butter slightly (don't melt it).
- Cream the butter with the sugar with an electric whisk (I use my mixer) until fluffy.
- Add the eggs, one at a time.
- Add the sour cream and ensure it is well mixed.
- Sift the flour and baking powder, then add to the mix.
- (Next time I will try adding a handful of chocolate chips to the mix at this point).
- Spoon into the tin and bake for 45-60 mins, testing with a skewer towards the end.
- Make a simple, thin icing by mixing the icing sugar with a small amount of warm water. Make just enough to cover the top with perhaps a dribble down the side.
