Sponge Loaf Recipe
A quick and easy sponge cake. Best served in a thin slice (slab) with a cup of tea.

Ingredients
  • 200g butter
  • 250g caster sugar
  • 2 large eggs
  • 200ml sour cream
  • 300g plain flour
  • 3 teaspoons baking poweder
  • 150g icing sugar

Directions
  1. Heat oven to 180, and grease/line the loaf tin.
  2. Soften the butter slightly (don't melt it).
  3. Cream the butter with the sugar with an electric whisk (I use my mixer) until fluffy.
  4. Add the eggs, one at a time.
  5. Add the sour cream and ensure it is well mixed.
  6. Sift the flour and baking powder, then add to the mix.
  7. (Next time I will try adding a handful of chocolate chips to the mix at this point).
  8. Spoon into the tin and bake for 45-60 mins, testing with a skewer towards the end.
  9. Make a simple, thin icing by mixing the icing sugar with a small amount of warm water. Make just enough to cover the top with perhaps a dribble down the side.
