These are a very simple and delicious cookie.

Ingredients
  • 1 package (18.25 oz) pineapple flavored cake mix
  • 1/2 cup butter or margarine, softened
  • 2 large eggs, slightly beaten
  • 2 teaspoons rum extract
  • 1 cup sweetened flaked coconut
  • 2 tablespoons milk

Directions
  1. Preheat oven to 350°F.
  2. Combine cake mix and butter together with a pastry cutter until mixture resembles coarse crumbs. Stir in the eggs, milk and rum extract; mix well. Stir in the flaked coconut until just combined.
  3. Drop by spoonfuls onto an ungreased baking sheet and bake for 12-15 minutes. Transfer to a wire rack to cool.
