Holiday Sweet Potatoes Recipe

Ingredients

4 large sweet potatoes, peeled, cubed, and cooked (or use a 40oz can, drained)

8 oz package of pineapple chunks, drained

1/4 tsp cinnamon

7 1/2 oz jar marshmallow fluff

1/4 cup butter or margarine

1 cup coarsely chopped walnuts

Directions

Preheat oven to 325

Arrange potatoes and pineapple in a 2qt baking dish and sprinkle with cinnamon

In a small saucepan, combine Marshmallow fluff and butter, and bring to boil over high heat, stirring constantly.

Pour over the sweet potato mixtureand sprinkle with the walnuts.

Bake for 15-20 minutes until hot and bubbling

**If you want to cook the potatoes in the microwave, put them in a microwave-safe dish (duh, lol), cover with plastic wrap and cook on high 10-12 minutes, until soft. I suppose you could do this while making the fluff mixture.
