How to make it

  • peel and dice mango
  • mince and saute shallot in 1oz of butter
  • add remaining butter, mango, honey salt
  • allow to simmer on low while you grill fish
  • salt and pepper grouper, grill fish until done, diamond pattern
  • plate, sauce, garnish with parsley.
  • Serving suggestions, fruit salsa, rice and beans

    This recipe is FANTASTIC! I think I said to my wife this is great or I love this after every bite. Highly recommend to anyone who likes grilled fish.

    You can use any mild flavored white fish. I am guessing new england should have some really nice fresh cod available, which would be a great choice.
