Chicken Rollatini Recipe

Ingredients
  • 2 boneless skinless chicken breasts, butterflied
  • 2 slices proscuitto or ham (deli style)
  • 2 slices provolone cheese
  • fresh spinach leaves
  • sundried tomatoes
  • flour for dredging
  • extra virgin olive oil
  • your favorite spaghetti sauce
  • toothpicks

Directions
  1. remove any fat from the chicken
  2. layer chicken with 1 slice each proscuitto and provolone
  3. in the center place a few sundried tomatoes and spinach leaves
  4. roll up chicken and secure with a toothpick
  5. dredge rolled up chicken in flour and shake of the excess
  6. repeat with outher chicken breast
  7. in a medium sized skillet, over meduim high heat, heat up 2 tablespoons or so of oil
  8. brown the chicken on all sides and finish off in a preheated 350 degree oven for about 10-15 minutes or till the juices in the chicken run clear
  9. while the chicken is cooking heat up spaghetti sauce
  10. when chicken is done, let rest for a few minutes then slice "pinwheel" style (remember to take out the toothpicks)
  11. fan out chicken on plate and top with spaghetti sauce
