How to make it

  • Heat wok on high and mix beef strips with oil and garlic
  • Stir fry beef strips in small batches for 1-2 mins . Remove when cooked ans allow wok to reheat be fore stir frying the next batch
  • Add onion and carrot to wok with a sprinkling of water. stir 2-3 mins .return beef strips
  • stir in Thai curry paste, chilli sauce, tomatoes and basil or coriander. Add noodles. Toss to heat about 2 mins
  • Serve with grated cucumber and slice of lime. Garnish with basil leaves
  • For a truly Thai flavour add a fresh coriander root and stem and pound in a mortar to a paste with the garlic. stir fry them in a little oil in wok before the beef
