Cajun Meat Muffins with Hot and Sweet Filling

- 2 packages "Grands" biscuit dough or other large size biscuit dough. shopping list
- 1/3 cup vegetable oil shopping list
- 1/2 lb ground pork shopping list
- 1/2 lb ground beef shopping list
- 1/4 lb (1 stick) unsalted butter shopping list
- 1 1/2 cups finely chopped onions shopping list
- 1 /12 cups finely chopped green bell peppers shopping list
- 3/4 cup finely chopped celery shopping list
- 1/2 cup very finely chopped fresh cayenne peppers or jalapeño peppers. shopping list
- 2 tablespoons minced garlic shopping list
- 3 bay leaves shopping list
- 1 tablespoon plus 1 teaspoon dried oregano leaves shopping list
- 1 tablespoon ground cumin shopping list
- 2 teaspoons salt shopping list
- 1 teaspoon ground red pepper (preferably cayenne) shopping list
- 1 teaspoon black pepper shopping list
- 1/2 teaspoon dried thyme leaves shopping list
- 1 cup chicken stock, or water shopping list
- 1 cup candied sweet potatoes shopping list
- Shredded monteray jack cheese. shopping list
How to make it
- preheat over to 350.
- Heat the oil in a large skillet over high heat.
- Add the pork and cook about 2 minutes, stirring constantly and breaking up the meat chunks.
- Stir in the beef and cook till no pink color remains.
- Add the butter, onions, bell peppers, celery, peppers, garlic and seasonings.
- stir until throughly mixed.
- Cook 5 minutes, stirring frequently to break up any remaining meat chunks and scraping pan bottom well.
- Cover, reduce heat and simmer for 5 minutes.
- Remove cover and cook for 5 minutes more continuing to crape the pan bottom well.
- Add the candied sweet potatoes and with thier juice.
- Stir well, breaking up the potatoes into smaller chunks.
- Cover and simmer for 5 minutes.
- Remove from heat.
- Cool to room temperature and remove bay leaves.
- While filling is cooling, split the dough for each biscuit into an upper and a lower half.
- Take each lower half and roll them out on a lightly floured surface.
- Line the bottom and sides of each muffin slot in the tin with the rolled biscuit dough.
- Fill to the top with filling
- Top with the other half of each biscuit.
- Sprinkle cheese on top.
- Bake until the cheese on top is a golden brown (approx. 15-20 minutes.)
