Orange-date-pecan-rum Holiday Ring Recipe
Delicious cake, made with self-rising flour, easy, lovely and perfect for the Holidays.

Ingredients
  • 2 sticks unsalted butter
  • 2 cups sugar
  • 4 eggs, beaten
  • 4 cups self-rising flour
  • 1-1/2 cups buttermilk
  • 1 tablespoon grated orange rind
  • 2 packages chopped dates
  • 1 cup chopped pecans
  • ORANGE GLAZE
  • 2 cups sugar
  • 1 cup orange juice
  • 2 tablespoons grated fresh orange rind
  • 1/4 cup rum (optional)

Directions
  1. In large bowl, cream butter and sugar
  2. Add beaten eggs, mix well
  3. Sift flour and add to creamed mixture alternately with buttermilk
  4. Add orange rind, dates, and pecans
  5. Mix to combine
  6. Pour into a greased and floured 10 inch tube pan
  7. Bake at 325 degrees for 1 hour and 30 minutes or until it tests done
  8. GLAZE
  9. Dissove sugar in orange juice over medium heart
  10. DO NOT BOIL
  11. Add orange rind and rum
  12. Remove cake from oven and punch holes all the way through the cake (almost to the bottom) with an ice pick
  13. Pour hot glaze over cake
  14. If cake has not pulled away from the sides and the tube, loosen with a knife so the glaze can run down the sides and center
  15. Let cake stand in pan for several hours or overnight
  16. Cool completely before removing from pan
