Orange-date-pecan-rum Holiday Ring

- 2 sticks unsalted butter shopping list
- 2 cups sugar shopping list
- 4 eggs, beaten shopping list
- 4 cups self-rising flour shopping list
- 1-1/2 cups buttermilk shopping list
- 1 tablespoon grated orange rind shopping list
- 2 packages chopped dates shopping list
- 1 cup chopped pecans shopping list
- orangE glaze shopping list
- 2 cups sugar shopping list
- 1 cup orange juice shopping list
- 2 tablespoons grated fresh orange rind shopping list
- 1/4 cup rum (optional) shopping list
How to make it
- In large bowl, cream butter and sugar
- Add beaten eggs, mix well
- Sift flour and add to creamed mixture alternately with buttermilk
- Add orange rind, dates, and pecans
- Mix to combine
- Pour into a greased and floured 10 inch tube pan
- Bake at 325 degrees for 1 hour and 30 minutes or until it tests done
- GLAZE
- Dissove sugar in orange juice over medium heart
- DO NOT BOIL
- Add orange rind and rum
- Remove cake from oven and punch holes all the way through the cake (almost to the bottom) with an ice pick
- Pour hot glaze over cake
- If cake has not pulled away from the sides and the tube, loosen with a knife so the glaze can run down the sides and center
- Let cake stand in pan for several hours or overnight
- Cool completely before removing from pan
