How to make it

  • In large bowl, cream butter and sugar
  • Add beaten eggs, mix well
  • Sift flour and add to creamed mixture alternately with buttermilk
  • Add orange rind, dates, and pecans
  • Mix to combine
  • Pour into a greased and floured 10 inch tube pan
  • Bake at 325 degrees for 1 hour and 30 minutes or until it tests done
  • GLAZE
  • Dissove sugar in orange juice over medium heart
  • DO NOT BOIL
  • Add orange rind and rum
  • Remove cake from oven and punch holes all the way through the cake (almost to the bottom) with an ice pick
  • Pour hot glaze over cake
  • If cake has not pulled away from the sides and the tube, loosen with a knife so the glaze can run down the sides and center
  • Let cake stand in pan for several hours or overnight
  • Cool completely before removing from pan
