Goat Cheese Croissants Recipe
This sandwich, combines some of my favorite foods: goat cheese, Kalamata olives, and fresh spinach! It's super easy & quick to make. I brought a tray of these to the family Christmas gathering this year and even the kids liked them!

Ingredients
  • 12 Croissants (I bought a tray at Costco)
  • 2 pkgs Goat Cheese (again, the big packs that Costco carries)
  • 2 - 3 Roasted Red Peppers from a jar, finely chopped
  • Handful Kalamata Olives, finely chopped
  • Fresh Baby Spinach, washed & dried, stems removed
  • Sea Salt and Freshly Ground Pepper to taste

Directions
  1. Using a serrated knife, cut croissants open creating tops & bottoms.
  2. In a medium bowl, use a fork to stir together cheese, peppers, olives, salt and pepper.
  3. Spread bottom halves of croissants with cheese mixture.
  4. Top with 2 layers of spinach and replace croissant top.
  5. Cut into halves or thirds if serving on an appetizer tray.
