Ingredients

250 gr. salmon fillet

1 piece of fresh ginger, peeled and grated

250 gr. boiled potatoes

1 egg beaten

75 gr. all purpose flour

2 tbs soy sauce

2 scallions, finely chopped

salt and pepper

2 tbs plain breadcrumbs

Directions

Rinse the salmon under cold running water.

Pat dry with a paper towel, skin, bone and chop.

Dice the boiled potatoes.

Put the scallions in a large bowl, add the salmon, potatoes, egg, salt and pepper, soy sauce, ginger and breadcrumbs and mix well with a fork. With your hands shape the mixture into medium sized balls, then with your palms flatten them forming burgers.

In a plate, place the flour and dredge the burgers.

Heat the oil in a frying pan until very hot.

Add the burgers and cook for 5 mins, or until nicely browned on both sides.

Drain on paper towels and serve hot.
