Ingredients
  • 250 gr. salmon fillet
  • 1 piece of fresh ginger, peeled and grated
  • 250 gr. boiled potatoes
  • 1 egg beaten
  • 75 gr. all purpose flour
  • 2 tbs soy sauce
  • 2 scallions, finely chopped
  • salt and pepper
  • 2 tbs plain breadcrumbs

Directions
  1. Rinse the salmon under cold running water.
  2. Pat dry with a paper towel, skin, bone and chop.
  3. Dice the boiled potatoes.
  4. Put the scallions in a large bowl, add the salmon, potatoes, egg, salt and pepper, soy sauce, ginger and breadcrumbs and mix well with a fork. With your hands shape the mixture into medium sized balls, then with your palms flatten them forming burgers.
  5. In a plate, place the flour and dredge the burgers.
  6. Heat the oil in a frying pan until very hot.
  7. Add the burgers and cook for 5 mins, or until nicely browned on both sides.
  8. Drain on paper towels and serve hot.

I love salmon croquettes, and I know I will love these, especially with the potato.
