Ingredients
  • 1 butternut squash
  • 1 c orange juice
  • 1/2 diced onion
  • salt to taste
  • dash cinnamon

Directions
  1. Cube and peel butternut squash
  2. Steam on the stovetop in a covered pot until soft (10-15 min)
  3. While steaming the squash, saute the onion in a tablespoon of extra virgin olive oil until translucent
  4. Puree all ingredients and serve warm

What do you do with the orange juice?


Hiya, you add it to the entire mixture to be pureed after cooking everything. If you prefer a stronger orange taste, use 1/2 c. concentrated instead. Enjoy!
