How to make it

  • Cube and peel butternut squash
  • Steam on the stovetop in a covered pot until soft (10-15 min)
  • While steaming the squash, saute the onion in a tablespoon of extra virgin olive oil until translucent
  • Puree all ingredients and serve warm

    The butternut squash would be more of a typical medium sized one found in the grocery.

    The blue hubbard squash I have is about the size of a basketball. Is that what the ratios are based around? Or something much smaller?

    Hiya, you add it to the entire mixture to be pureed after cooking everything. If you prefer a stronger orange taste, use 1/2 c. concentrated instead. Enjoy!
