APRICOT MACAROON CHEESECAKE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Navarro Estate in Arlington, Texas in 1986.

Ingredients
  • 15 ounce refrigerated pie crust
  • 8 ounces cream cheese softened
  • 1/2 cup granulated sugar
  • 1/4 cup sour cream
  • 1/4 cup apricot spreadable fruit
  • 1 teaspoon almond extract
  • 1 egg
  • 1 cup coconut
  • 1/2 cup chopped almonds
  • 2 tablespoons brown sugar
  • 1/2 cup apricot spreadable fruit
  • 1 teaspoon almond extract
  • 2 eggs
  • 1/2 cup whipping cream whipped
  • 2 tablespoons toasted coconut
  • 10 dried apricot pieces

Directions
  1. Heat oven to 350.
  2. In large bowl combine cream cheese and sugar then beat until smooth.
  3. Add sour cream, apricot fruit, almond extract and eggs then beat until well blended.
  4. Pour into crust lined pan and bake at 350 for 45 minutes.
  5. Garnish with whipped cream and coconut.
  6. Store in refrigerator.
