Easy and Impressive Stuffed Pork Chops

Ingredients
  • 1/4c dried cherries
  • 2Tbs. water
  • 3Tbs. chopped onion
  • 2Tbs. chopped celery
  • 1Tbs. shredded carrot
  • 2tsp. dried parsley flakes
  • 1Tbs butter
  • 3/4c sage stuffing mix
  • 1/3c chicken broth
  • 4 boneless pork loin chops(1" thick and 6 oz. each)
  • 1/4tsp. pepper
  • 2Tbs. veg oil
  • Gravy:
  • 2Tbs all purpose flour
  • 1/4tsp. dried rosemary,crushed
  • 1/8tsp. salt
  • 3/4c plus 2Tbs. chicken broth
  • 1/4c heavy whipping cream

Directions
  1. In a small saucepan,bring cherries and water to a boil. Remove from the heat;set aside(do not drain)
  2. In a small skiller,saute the onion,celery and parsley in butter till tender. Stir in the stuffing mix,broth and cherries. Remove from the heat;cover and let stand 5 mins. or until moisture is absorbed.
  3. Cut a deep slit in each chop,forming a pocket
  4. Stuff about 1/4 c cherry mixture into each chop;secure with toothpicks. Sprinkle with pepper. In a lg. skillet,cook chops in oil for 8-10 mins. on each side or unttil a meat thermometer reads 160. Remove and keep warm.
  5. Add flour,rosemary and salt to the pan juices;stir until blended. Gradually stir in broth and cream. Bring to a boil;cook and stie for 2 mins. or until thickened. Serve with pork chops.
