Pineapple With Tarragon Dressing Recipe
Many of my recipes involve surprising people. This is one way to surprise people with a pineapple salad.

Ingredients
  • 1 fresh pineapple
  • sugar
  • lemon juice
  • 1 large egg
  • 3 Tbsp tarragon vinegar
  • 2 Tbsp sugar
  • salt
  • 3 Tbsp heavy cream, lightly whipped

Directions
  1. Cut the pineapple in half lengthwise and carefully remove the core.
  2. Cut the flesh away from the shell, slice it, and replace neatly in the shell.
  3. Dust with sugar and lemon juice and let stand while making the dressing.
  4. Beat the egg.
  5. Add vinegar and 2 Tbsp sugar with a pinch of salt.
  6. Set the bowl in pan of simmering water (or a double boiler), and stir until thickens.
  7. Transfer to a cool container. When the mix is cold, fold in whipped cream and adjust the seasoning.
  8. Spread dressing over pineapple just before serving.
