How to make it

  • Cut the pineapple in half lengthwise and carefully remove the core.
  • Cut the flesh away from the shell, slice it, and replace neatly in the shell.
  • Dust with sugar and lemon juice and let stand while making the dressing.
  • Beat the egg.
  • Add vinegar and 2 Tbsp sugar with a pinch of salt.
  • Set the bowl in pan of simmering water (or a double boiler), and stir until thickens.
  • Transfer to a cool container. When the mix is cold, fold in whipped cream and adjust the seasoning.
  • Spread dressing over pineapple just before serving.
