Pineapple with Tarragon dressing

- 1 fresh pineapple shopping list
- sugar shopping list
- lemon juice shopping list
- 1 large egg shopping list
- 3 Tbsp tarragon vinegar shopping list
- 2 Tbsp sugar shopping list
- salt shopping list
- 3 Tbsp heavy cream, lightly whipped shopping list
How to make it
- Cut the pineapple in half lengthwise and carefully remove the core.
- Cut the flesh away from the shell, slice it, and replace neatly in the shell.
- Dust with sugar and lemon juice and let stand while making the dressing.
- Beat the egg.
- Add vinegar and 2 Tbsp sugar with a pinch of salt.
- Set the bowl in pan of simmering water (or a double boiler), and stir until thickens.
- Transfer to a cool container. When the mix is cold, fold in whipped cream and adjust the seasoning.
- Spread dressing over pineapple just before serving.
