Ingredients
  • 2 small boxes frozen chopped broccoli, thawed (or one bag)
  • 3 green onions, chopped (tops and bottoms)
  • 1/2-cup mayo
  • 1 can cream of mushroom soup
  • 8-oz mild cheddar cheese, freshly grated
  • 1 stack of Ritz crackers, crushed
  • 1 stick melted margarine

Directions
  1. Preheat oven to 350°. Cook broccoli a few minutes, drain and put in buttered rectangular baking dish. Mix onions, mayonnaise, soup and cheese and spread over the top of the broccoli. Sprinkle the crushed crackers over the top of everything and drizzle with the melted margarine. Bake in the preheated oven for 25-35 minutes. Let sit for at least 5 minutes before serving.

Alterations


I make this all the time for my son. But, I added a little twist to the recipe. I use Miracle Whip salad dressing it gives the flavor that extra zing and instead of the ritz crackers for the topping I tried Frenches Fried Onions.


I also used Miracle Whip, used cream crackers and instead of cheddar cheese, I used Velveeta with jalapeno to give it some life! Yummmm
