The Good Cookie

- 1 1/2 cups rolled oats shopping list
- 1/2 cup barley flour shopping list
- 1/2 cup oat flour shopping list
- 1/4 teaspoon salt shopping list
- 1/3 cup safflower oil shopping list
- 1/4 cup brown rice syrup shopping list
- 1/4 cup maple syrup shopping list
- 1/3 cup chopped walnuts shopping list
- 1/3 cup dairy-free chocolate chips shopping list
How to make it
- Mix dry ingredients in a bowl.
- Mix wet ingredients in liquid measuring cup and then mix wet and dry together.
- Preheat oven to 350. (I don't turn it on sooner because it doesn't need to be fully heated up to put the cookies in.)
- Scoop the cookies onto the cookie sheet. The mix is very crumbly so wet your hands to press them together.
- Bake for 6 to 9 minutes. I take them out when they are still very soft. (So it makes it tricky to get them off the cookie sheet. I usually need to press them together once I take them out.) The longer they bake, the crispier they are.
- They are also good without the chocolate chips.
