The Good Cookie Recipe
More people ask for this recipe than any other food I make. They are shocked it is wheat-, and dairy-free and very little simple sugar. They are also incredibly easy. I can get them on the table in 20 minutes and only dirty one bowl.

Ingredients
  • 1 1/2 cups rolled oats
  • 1/2 cup barley flour
  • 1/2 cup oat flour
  • 1/4 teaspoon salt
  • 1/3 cup safflower oil
  • 1/4 cup brown rice syrup
  • 1/4 cup maple syrup
  • 1/3 cup chopped walnuts
  • 1/3 cup dairy-free chocolate chips

Directions
  1. Mix dry ingredients in a bowl.
  2. Mix wet ingredients in liquid measuring cup and then mix wet and dry together.
  3. Preheat oven to 350. (I don't turn it on sooner because it doesn't need to be fully heated up to put the cookies in.)
  4. Scoop the cookies onto the cookie sheet. The mix is very crumbly so wet your hands to press them together.
  5. Bake for 6 to 9 minutes. I take them out when they are still very soft. (So it makes it tricky to get them off the cookie sheet. I usually need to press them together once I take them out.) The longer they bake, the crispier they are.
  6. They are also good without the chocolate chips.
