FROSTED SPINACH STUFFED MEATLOAF This recipe came from an estate sale. I obtained it when I purchased the family collection from the Blake Estate in Dallas, Texas in 1988.

Ingredients
  • 1 pound ground beef
  • 1/2 pound ground pork
  • 3 garlic cloves crushed
  • 1/4 cup plain bread crumbs
  • 1/4 cup parmesan cheese
  • 1 egg
  • 1 box frozen chopped spinach thawed and squeezed dry
  • 1/4 cup minced white onion
  • 1 egg
  • 1/4 cup Italian bread crumbs
  • 1 cup cheddar cheese shredded
  • 1/8 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • Cheesy Mashed Potatoes:
  • 5 medium potatoes peeled and cut into 8 pieces
  • 1/2 cup whole milk
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 cup cheddar cheese shredded

Directions
  1. Mix beef, pork, garlic, bread crumbs, parmesan cheese and egg.
  2. On a piece of waxed paper pat meat mixture into a rectangle.
  3. Mix spinach, onion, egg, Italian bread crumbs, cheese, salt and pepper.
  4. Spread over patted meat mixture.
  5. Starting at a narrow end roll meatloaf up in a jelly roll fashion.
  6. Place in a loaf pan and bake at 400 for 1 hour.
  7. Place potatoes in a large pot with enough water to cover.
  8. Bring potatoes to a boil over high heat then reduce heat to medium and cook until tender.
  9. Remove from heat then drain and add milk and mash until smooth.
  10. Add salt and pepper to taste.
  11. Gently stir in shredded cheese then cover and let sit until cheese melts.
  12. About half way through cooking time top meatloaf with potatoes.
  13. Continue cooking 30 minutes until potatoes are nice are browned.
  14. Allow to sit 5 minutes before serving.
