How to make it

  • Mix beef, pork, garlic, bread crumbs, parmesan cheese and egg.
  • On a piece of waxed paper pat meat mixture into a rectangle.
  • Mix spinach, onion, egg, Italian bread crumbs, cheese, salt and pepper.
  • Spread over patted meat mixture.
  • Starting at a narrow end roll meatloaf up in a jelly roll fashion.
  • Place in a loaf pan and bake at 400 for 1 hour.
  • Place potatoes in a large pot with enough water to cover.
  • Bring potatoes to a boil over high heat then reduce heat to medium and cook until tender.
  • Remove from heat then drain and add milk and mash until smooth.
  • Add salt and pepper to taste.
  • Gently stir in shredded cheese then cover and let sit until cheese melts.
  • About half way through cooking time top meatloaf with potatoes.
  • Continue cooking 30 minutes until potatoes are nice are browned.
  • Allow to sit 5 minutes before serving.
