Potato Topped Spinach Stuffed Meatloaf

- 1 pound ground beef shopping list
- 1/2 pound ground pork shopping list
- 3 garlic cloves crushed shopping list
- 1/4 cup plain bread crumbs shopping list
- 1/4 cup parmesan cheese shopping list
- 1 egg shopping list
- 1 box frozen chopped spinach thawed and squeezed dry shopping list
- 1/4 cup minced white onion shopping list
- 1 egg shopping list
- 1/4 cup Italian bread crumbs shopping list
- 1 cup cheddar cheese shredded shopping list
- 1/8 teaspoon kosher salt shopping list
- 1/4 teaspoon freshly ground black pepper shopping list

- 5 medium potatoes peeled and cut into 8 pieces shopping list
- 1/2 cup whole milk shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 1 cup cheddar cheese shredded shopping list
How to make it
- Mix beef, pork, garlic, bread crumbs, parmesan cheese and egg.
- On a piece of waxed paper pat meat mixture into a rectangle.
- Mix spinach, onion, egg, Italian bread crumbs, cheese, salt and pepper.
- Spread over patted meat mixture.
- Starting at a narrow end roll meatloaf up in a jelly roll fashion.
- Place in a loaf pan and bake at 400 for 1 hour.
- Place potatoes in a large pot with enough water to cover.
- Bring potatoes to a boil over high heat then reduce heat to medium and cook until tender.
- Remove from heat then drain and add milk and mash until smooth.
- Add salt and pepper to taste.
- Gently stir in shredded cheese then cover and let sit until cheese melts.
- About half way through cooking time top meatloaf with potatoes.
- Continue cooking 30 minutes until potatoes are nice are browned.
- Allow to sit 5 minutes before serving.
