How to make it

  • Heat oven to 325.
  • In food processor bowl combine croutons, pepper, cayenne, chili powder and thyme.
  • Pulse until mixture is of a fine texture.
  • Place this mixture into a large bowl.
  • Combine onion, carrot, garlic and red pepper in the food processor bowl.
  • Pulse until mixture is finely chopped but not pureed.
  • Combine vegetable mixture, ground sirloin and ground chuck with bread crumbs mixture.
  • Season meat mixture with kosher salt.
  • Add egg and combine thoroughly but avoid squeezing the meat.
  • Pack this mixture into a loaf pan.
  • Onto parchment paper lined baking sheet turn meatloaf out of the pan onto center of tray.
  • Insert a temperature probe at a 45 degree angle into top of the meatloaf.
  • Set probe for 155 degrees.
  • Combine ketchup, cumin, Worcestershire, hot pepper sauce and honey.
  • Brush the glaze onto the meatloaf after it has been cooking for 10 minutes.
