Sweet And Savory Meatloaf Recipe
SWEET AND SAVORY MEATLOAF I obtained this recipe from an estate sale when I purchased the family collection from the Ridings Estate in Grand Prairie, Texas in 1982.

Ingredients
  • 6 ounces garlic flavored croutons
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon chili powder
  • 1 teaspoon dried thyme
  • 1/2 onion roughly chopped
  • 1 carrot peeled and broken
  • 3 whole garlic cloves
  • 1/2 red bell pepper
  • 18 ounces ground chuck
  • 18 ounces ground sirloin
  • 1-1/2 teaspoons kosher salt
  • 1 egg
  • Glaze:
  • 1/2 cup ketchup
  • 1 tablespoon ground cumin
  • 1/8 teaspoon Worcestershire sauce
  • 1/8 teaspoon hot pepper sauce
  • 1 tablespoon honey

Directions
  1. Heat oven to 325.
  2. In food processor bowl combine croutons, pepper, cayenne, chili powder and thyme.
  3. Pulse until mixture is of a fine texture.
  4. Place this mixture into a large bowl.
  5. Combine onion, carrot, garlic and red pepper in the food processor bowl.
  6. Pulse until mixture is finely chopped but not pureed.
  7. Combine vegetable mixture, ground sirloin and ground chuck with bread crumbs mixture.
  8. Season meat mixture with kosher salt.
  9. Add egg and combine thoroughly but avoid squeezing the meat.
  10. Pack this mixture into a loaf pan.
  11. Onto parchment paper lined baking sheet turn meatloaf out of the pan onto center of tray.
  12. Insert a temperature probe at a 45 degree angle into top of the meatloaf.
  13. Set probe for 155 degrees.
  14. Combine ketchup, cumin, Worcestershire, hot pepper sauce and honey.
  15. Brush the glaze onto the meatloaf after it has been cooking for 10 minutes.
