El Paso Turkey Patties Recipe
This is a nice, fast, easy, light weeknight meal.

Ingredients
  • 1 egg, slightly beaten
  • 1 package (20 oz.) lean ground turkey
  • ¼ cup plain bread crumbs
  • 2 tablespoons taco seasoning mix
  • 1 cup thick and chunky salsa
  • 1 medium avocado, pitted, peeled and chopped
  • 4 cups shredded lettuce

Directions
  1. Heat gas or charcoal grill. In medium bowl, mix egg, turkey, bread crumbs, taco seasoning mix and ¼ cup of the salsa. Shape mixture into 4 patties, ½ inch thick.
  2. When grill is heated, place patties on gas grill over medium heat or on charcoal grill over medium coals; cover grill. Cook 10 to 12 minutes, turning once, until patties are no longer pink in center.
  3. Meanwhile, in medium bowl, mix remaining ¾ cup salsa and the avocado. To serve, place 1 cup lettuce on each serving plate; top with turkey patty and ¼ of avocado mixture, or serve on a bun.

Very good! I learned a great lesson in following directions tonight. Remember not to use the entire cup of salsa in the meat mixture.......had to go back to the store and get more ground turkey.....just more leftovers!
