Perfect Veal Stuffed Zucchini Recipe
PERFECT VEAL STUFFED ZUCCHINI This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hoyt Estate in Allen, Texas in 1989.

Ingredients
  • 4 medium zucchini halved lengthwise
  • 1 pound ground veal
  • 1/4 cup onion chopped
  • 1 garlic clove minced
  • 1 tablespoon butter
  • 1 small tomato chopped
  • 1 tablespoon chopped parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon basil
  • 1/8 teaspoon freshly ground black pepper
  • 1/2 cup crunchy nut cereal
  • 8 ounces plain yogurt

Directions
  1. Remove pulp from zucchini then chop and set aside.
  2. Parboil zucchini shells in boiling water to cover for 1 minute.
  3. Drain and place in shallow baking dish.
  4. Sauté veal, onion and garlic in butter in skillet for 2 minutes.
  5. Add chopped pulp, tomato, parsley, salt, basil and pepper.
  6. Sauté 5 minutes longer or until zucchini is tender.
  7. Add cereal and 1/2 cup of the yogurt.
  8. Spoon into shells and bake at 350 for 15 minutes.
  9. Serve with remaining yogurt.
  10. Sprinkle with additional chopped parsley if desired.
