How to make it

  • Preheat oven to 400
  • Line a baking sheet with foil and place ribs on top. Rub ribs with 1T garlic and 1T ginger. Drizzle with 2T oil. Season with salt and pepper. Cover with foil and crimp the sides to seal tightly. Bake 45 minutes.
  • In saucepan, heat oil over medium heat and add onion, 1T garlic and 1T ginger. Add salt and pepper and cook until onion is soft. Stir in cranberry sauce, cranberrry juice, hoisin sauce and chili paste. Simmer over medium heat about 5 minutes.
  • In a large skillet, heat remaining 2T oil over medium heat. Add remaining 1T garlic and 1T ginger and cook stirring for 30 seconds. Add spinach and season with salt and pepper, cooking until wilted..about 2-3 minutes.
  • Preheat broiler. Transfer ribs to counter and unwrap. Brush on both sides with glaze. Broil 4 inches from heat until bones are slightly charred .. about 2-4 minutes. Turn over and brush with remaining glaze. Broil 3-5 minutes longer.
  • Let rest 5 minutes. Serve with wilted spinach.

    The magic word to me is cranberry! I have tried making ribs with them and it was always lacking something... I think yu have it with the hoisin and chili... Can't wait!
