How to make it

  • Preheat oven or toaster oven to 400 degrees.
  • Slowly simmer raisins, juice, syrup and 1 tablespoon of butter together until raisins plump and juice is slightly reduced.
  • While juice is simmering peel a strip around middle of apples. Prepare a glass baking dish by spraying lightly with canola spray. Place the apples in baking dish and stuff with 1 tablespoon brown sugar, nuts and cinnamon.
  • Dot tops with divided 1 tablespoon of butter.
  • Pour juice mixture over apples and bake, covered, in oven for 35 to 45 minutes until apples are tender.
  • Spoon juice over apples several times while baking.
  • Serve warm as is or top with sugar free whipped topping to taste. Enjoy!
