Baked Apples Recipe
I devised this recipe using Splenda brown sugar for cooking because I just couldn't beat the craving but wanted to be reasonable!

Ingredients
  • 1 tablespoon raisins
  • 1 cup reduced sugar apple juice
  • 1 tablespoon sugar free pancake syrup
  • 2 tablespoons butter, divided
  • 1 tablespoon Splenda brown sugar
  • 2 tablespoons toasted finely chopped pecans or walnuts
  • 1/4 teaspoon or more ground cinnamon
  • 2 medium baking apples, cored
  • canola spray

Directions
  1. Preheat oven or toaster oven to 400 degrees.
  2. Slowly simmer raisins, juice, syrup and 1 tablespoon of butter together until raisins plump and juice is slightly reduced.
  3. While juice is simmering peel a strip around middle of apples. Prepare a glass baking dish by spraying lightly with canola spray. Place the apples in baking dish and stuff with 1 tablespoon brown sugar, nuts and cinnamon.
  4. Dot tops with divided 1 tablespoon of butter.
  5. Pour juice mixture over apples and bake, covered, in oven for 35 to 45 minutes until apples are tender.
  6. Spoon juice over apples several times while baking.
  7. Serve warm as is or top with sugar free whipped topping to taste. Enjoy!
