Alpine Potato Bake

- 2 lbs. potatoes shopping list
- 1 cup chopped onion shopping list
- 1/4 cup butter or margarine shopping list
- 2 T. all purpose flour shopping list
- 1/4 tsp. pepper shopping list
- 2 T. spicy brown mustard shopping list
- 2 cups chicken broth or bouillion shopping list
- 1 tsp. horseradish shopping list
- 1/4 cup dried bread crumbs shopping list
How to make it
- Butter a 2 qt. rectangular baking dish.
- In a 3 qt. saucepan, cook potatoes in boiling salted water until tender.
- Drain and let cool.
- Preheat oven to 375
- In the same saucepan over med. heat, saute onion in butter for 10 min. or until tender and golden.
- Stir in flour and pepper, then broth.
- Stirring, bring to a boil and boil for 1 min. Remove from heat.
- Whisk in spicy brown mustard and horseradish.
- Slice potatoes 1/2" thick.
- Layer in baking dish.
- Cover potatoes with sauce and sprinkle with bread crumbs.
- Bake for 15-20 minutes or until hot and bubbly.
