How to make it

  • Combine cornmeal, flour, baking powder and soda.
  • Add salt and pepper.
  • Mix in onion, then stir in butterrmilk or beer and beaten eggs.
  • Pour oil 1/2" deep in heavy skillet. Heat oil til dough dropped from spoon sizzles immediately.
  • Drop dough by spoonsful into hot oil.
  • Cook over med. heat until puffed and lightly browned on one side, then turn and cook til browned on the other side.
  • Remove and drain on paper towels.
  • Cook remaining hushpuppies.
