Ingredients
  • 2 tablespoons olive oil
  • 1 1/2 pounds chicken cut into bite sized pieces
  • 1 large onion cut into wedges
  • 2 cloves minced crushed garlic
  • 2 teaspoons fresh ginger root minced
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon ground coriander
  • 4 tablespoons soy sauce
  • 3 teaspoons fish sauce
  • 4 tablespoons water
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cumin
  • 1 cup unsalted roasted cashews
  • 4 cups cooked white rice

Directions
  1. Sauté chicken in oil in large wok for 3 minutes
  2. Add onion, garlic and ginger and fry until onions are tender.
  3. Add cayenne, coriander, soy sauce, fish sauce, water, lemon juice and cumin.
  4. Fry 1 minute longer to blend flavors
  5. Add cashews and mix well. Serve immediately over white rice.
