Ingredients
  • 2 medium butternut squash
  • oilve oil
  • 12 cups chicken stock
  • 1 onion
  • 1cup rice
  • shredded chicken
  • 1 can corn
  • 1 1/2 cup half and half

Directions
  1. rub squash with olive oil salt and pepper cook in oven 400 degrees 1 hour. Let cool. Put squash in blender puree with two cups of chicken broth.set aside.
  2. In large pot add rice onoin.chicken and corn to 10 cups chicken broth bring to boil.
  3. add pureed squash.
  4. turn down low heat and cook for 30 minutes.
  5. skim fat off top if there is any and add half and half.
  6. Add salt and pepper to taste serve
