How to make it

  • Wash and soak butter (or large lima) beans overnight in large bowl
  • Using large pot with lid, bring beans to boil then reduce heat to a slow simmer,
  • Cook bacon in microwave on high for 1 ½ minutes until crisp and add all but 1/4 cup to the simmering beans
  • Sauté green onions, celery and garlic in bacon drippings for 1 or 2 minutes
  • Stir the sauté in simmering beans, add parsley, sea salt, celery salt and ground pepper;
  • Cook lima beans util 4-6 hours or desired tenderness
  • Turn off heat and stir stir in 2 tablespoons of butter
  • Ladel into large soup bowls, Sprinkle with bacon bits and add a pinch of fresh parsely.
  • Serve with fresh baked corn bread with butter.
