Butterbeans And Bacon Southern Style

- 1 32 oz package of large lima beans shopping list
- 1 lb package of lean bacon slices, cut in 1 inch pieces shopping list
- 6 green onions, chopped shopping list
- 2 stalks of fresh celery ,chopped shopping list
- 1 tablespoon fresh garlic shopping list
- 1/4 cup chopped fresh parsley shopping list
- 1 teaspoon sea salt shopping list
- 1 teaspoon celery salt shopping list
- 1/2 teaspoon of fresh ground peppercorns shopping list
- 1 tablespoon of butter shopping list
How to make it
- Wash and soak butter (or large lima) beans overnight in large bowl
- Using large pot with lid, bring beans to boil then reduce heat to a slow simmer,
- Cook bacon in microwave on high for 1 ½ minutes until crisp and add all but 1/4 cup to the simmering beans
- Sauté green onions, celery and garlic in bacon drippings for 1 or 2 minutes
- Stir the sauté in simmering beans, add parsley, sea salt, celery salt and ground pepper;
- Cook lima beans util 4-6 hours or desired tenderness
- Turn off heat and stir stir in 2 tablespoons of butter
- Ladel into large soup bowls, Sprinkle with bacon bits and add a pinch of fresh parsely.
- Serve with fresh baked corn bread with butter.
