A easy lasagna dish, my attempt to make a lasagna my husband would like, it worked!

Ingredients
  • 1 lb Italian sausage
  • 1 box uncooked lasagna noodles
  • 2 jars of favorite spaghetti sauce
  • 1 15 oz container of Ricotta cheese
  • 1 large or 2 small zucchini thinly sliced long ways
  • 6-8 large portabella mushrooms thinly sliced
  • 2 cups shredded mozzarella cheese
  • 2 cups shredded parmesan cheese

Directions
  1. Brown sausage
  2. Spread bottom of 9x12 pan with sauce
  3. Lay out uncooked lasagna noodles
  4. Spread 1/2 Ricotta cheese on top
  5. Top with all of the zucchini
  6. Top with half of sausage
  7. Top with sauce
  8. Top with handful of moz and parm cheese
  9. Lay another layer of noodles
  10. Top with remaining Ricotta cheese
  11. Spread out mushrooms (all of them)
  12. Top with remaining sausage
  13. Top with sauce
  14. Top with cheese
  15. You can repeat these steps as many times as desired.. I also took some Alfredo cheese and mixed it in the top layer of spaghetti sauce before topping with the shredded cheese.
  16. Bake covered with foil for one hour
  17. Remove foil and bake another 15 minutes or so just to brown cheese.
  18. Enjoy!
