Pork Tenderloin Recipe
With a blast full of flavor, this pork tenderloin hits a homerun. Rub the tenderloin with some thyme and mustard powder, pour sherry, soy sauce, ginger and garlic over the top. The next day roast it and serve with an sherry sauce or apple jelly.

Ingredients
  • 2 1/2 lbs of pork tenderloin
  • 1/8 tsp thyme (dried)
  • 1/8 tsp mustard powder to taste
  • 2 tbsp minced fresh ginger root
  • 1/2 cup dry sherry
  • 1/2 cup soy sauce
  • 1 tbsp soy sauce
  • 2 tbsp dry sherry
  • 3 garlic cloves, minced
  • 3/4 cup apple jelly

Directions
  1. 1. Rub meat with the thyme and mustard powder. Put in a safe dish and add 1/2 cup soy sauce, 1/2 cup sherry and the garlic and ginger. Coat the loin really good, then cover and refrigerate overnight.
  2. 2. Preheat oven to 325 degrees.
  3. 3. Bake at 325 degrees for 25 min. per lb, or until inside temperature reads 160 degrees. Baste the loin occasionally while it’s cooking.
  4. 4. While cooking the loin, prepare the apple jelly in a small saucepan over medium heat. Add 2 tbsp sherry and 1 tbsp soy sauce, stir well, heat to low and let simmer. Pour over loin when it’s completed.

Tried this out at a bachelor party long weekend. Was delicious.

4 pounds of pork loin was consumed quite readily. Although for me personally, I found the outside to have too strong a soy/sherry taste. Marinating for a few less hours would have been better if I was just making it for myself again. The apple jelly was perfect though.
