This is a simple and lovely soup.

Ingredients
  • 1 small head of broccoli
  • 2 small onions - chopped
  • 2 cloved garlic - chopped roughly
  • 2 litres chicken or veg stock
  • 1 teaspoon red chilli - chopped roughly
  • 2 cupes grated chedder
  • salt
  • pepper
  • papricka
  • Greek Yogurt (Optional)

Directions
  1. In a medium sized pot
  2. Sautee the garlic, red chilli and onion until beginning to brown in a small amount of oil.
  3. Add broccoli and continue to sautee until cooked through and just starting to go soft.
  4. Add stock and bring to a boil.
  5. Add salt, pepper and papricka to taste
  6. Once boiling add cheese
  7. Once cheese is all melted, remove from heat.
  8. Ladle into a blender
  9. Blend on medium speed until smooth in texture
  10. Pour into bowls
  11. If you want a slightly creamier taste, add a dollip of greek yogurt into the bowls before serving.

lovely recipe -thanks for sharing- I looked at the alternative too thinking it may be a variation on this one ,but see its the same recipe LOL .Looks quick and easy to make and with ingredients that your most likely to have in stock at any time - definitely giving it 5
