Ingredients

How to make it

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease or line 10 muffin cups.
  • In a medium bowl, mash bananas well.
  • Combine eggs and bananas.
  • In a separate bowl, mix together flour, salt, sugar and baking soda.
  • Stir banana mixture into flour mixture. Fold in walnuts if desired.
  • Pour batter into prepared muffin cups.
  • Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into center of a muffin comes out clean.

    Fantastic recipe. The kids love them and they are great to freeze and then put in the lunch boxes. I added some extra bananas and reduced the sugar and heaps better than store bought stuff. My 6yr old makes them completely on her own too!

    added 1tsp ea vanilla and cinnamon. Sub 1 cup of oatmeal for flour and cut back sugar to 1/2 cup. Moist and delicious!

    I made these with 1 tsp of vanilla, 1 cup oatmeal in place of 1 cup flour, and used milled flax seed instead of eggs per the boxes directions. I also made them in a non-stick mini muffin pan and cooked for 15 minutes. My husband loved them! They use plenty of banana and are so easy to make.

    These were so good and easy to make! I added a splash of vanilla substituted 1 cup of flour for 1 cup of oatmeal flakes, for a little more texture and bulk. I also threw in a handful of chocolate chips. Very good although I think I will omit the chocolate chips next time as it's takes away from the healthy aspect. It was Easter so I thought I would put them in as a nice treat. This will be a recipie I go back to often!

    Added 1/2 tsp of vanilla and 3/4 cup of semi sweet chocolate chips. These are simple, easy, and tasty! I love how they have no butter/margarine.

    Love that these are virtually fat free (except for the eggs!). I reduced the suagr to 1/2c and added 1/4c wheat bran for fiber. Also added 1/2c choc chips - everyone loved them! The kids thought they were dessert! (:

    So delicious ! I used 1 cup oatmeal and 1 cup flour to add more texture and fibre. I also added 1/2 cup semisweet choc chips to entice my boys with . They loved them !
