Golden Yam Rolls

- 1 package dry yeast shopping list
- 1/4 cup warm water shopping list
- 1/4 cup butter flavor shortening shopping list
- 1/2 cup milk scalded shopping list
- 1/4 cup sugar shopping list
- 1 teaspoon salt shopping list
- 1/4 teaspoon ground nutmeg shopping list
- 1/4 teaspoon ground cinnamon shopping list
- 3/4 cup cooked mashed yam shopping list
- 1 egg beaten shopping list
- 3-1/2 cups all-purpose flour shopping list
- 1/4 cup butter melted shopping list
How to make it
- Dissolve yeast in warm water and let stand 5 minutes.
- Combine shortening, milk, sugar, salt and spices in large mixing bowl and stir until shortening melts.
- Cool to 105 degrees.
- Add yam, egg and yeast mixture mixing well.
- Gradually stir in flour to make a soft dough.
- Turn dough out onto a floured surface and knead until smooth and elastic.
- Place in a greased bowl turning to grease top.
- Cover and let rise in warm place free from drafts 1 hour or until double.
- Punch dough down.
- Roll out to 3/4 inch thick on lightly floured surface.
- Cut with a 2 inch biscuit cutter and place in a greased cookie sheet.
- Brush with melted butter then cover and let rise in warm place free from drafts 30 minutes or until doubled in bulk.
- Bake at 375 for 25 minutes.
