How to make it

  • Heat cream, orange zest, sugar and allspice in a small pan, until just starting to bubble (not boiling)
  • Remove from heat and put in chocolate. Stir until melted in.
  • Beat in egg yolk, rum and butter until smooth.
  • Pour into espresso cups, or large shot glasses and put in the fridge until set. (Usually takes a few hours, but I'm impatient)
  • Serve!
