Apple Loaf

- 4 cups peeled, diced macintosh apples shopping list
- 2 cups plus 2 teaspoons sugar, divided shopping list
- 1 cup butter shopping list
- 3 cups flour shopping list
- 2 teaspoons baking soda shopping list
- 2 teaspoons cinnamon shopping list
- 2 eggs shopping list
- 1 teaspoon vanilla shopping list
How to make it
- In large bowl, combine apples and 2 cups sugar. Let stand at room temperature for 2 hours, stirring occasionally.
- Preheat oven to 325 degrees. Grease 2 (8 1/2 x 4 1/2-inch) loaf pans.
- Melt butter and cool. Combine flour, baking soda and cinnamon. Stir in apple mixture. Stir in butter, eggs and vanilla. Pour into prepared pans. Sprinkle remaining sugar over tops. Bake for 1 1/4 to 1 1/2 hours, or until done. Cool in pans for 10 minutes. Remove to a wire rack to cool completely. Chill until ready to serve.
- Serving quantity: Serves 32.
