Zesty Italian Salad

- 2 zucchini, chopped shopping list
- 2 tomatoes, chopped shopping list
- 1 cup fresh or thawed frozen corn shopping list
- 1/2 cup thinly sliced green onions shopping list
- 1/2 cup picante sauce shopping list
- 2 tablespoons minced fresh parsley shopping list
- 1 tablespoon lemon juice shopping list
- 1 tablespoon oil shopping list
- 1/2 teaspoon garlic salt shopping list
- 1/4 teaspoon ground cumin shopping list
- 1/4 teaspoon dried basil shopping list
How to make it
- In bowl, combine zucchini, tomatoes, corn, green onions and picante sauce. In small bowl, combine parsley, lemon juice, oil, garlic salt, cumin and basil. Mix well. Pour over zucchini mixture. Toss to coat completely. Cover and chill for 4 hours.
- Serving quantity: Serves 8.
