How to make it

  • In a large bowl, combine the oats, flour, sugar, baking powder, baking soda and salt. In a smaller bowl, combine buttermilk, eggs, melted butter and vanilla.
  • After combining, add liquid ingredients all at once to dry ingredients.
  • Stir with a fork to blend well.
  • Do not over-beat. Let stand 30 to 40 minutes.
  • Batter will thicken (if batter is too thick, add more milk, one tablespoon at a time until batter thins).
  • Cook on prepared hot griddle.
