Oatmeal Pancakes

- 4 cups rolled oats (not quick cooking oats) shopping list
- 1 cup flour shopping list
- 1/4 cup sugar shopping list
- 2 teaspoons baking powder shopping list
- 2 teaspoons baking soda shopping list
- Pinch of salt shopping list
- 1 quart buttermilk shopping list
- 4 eggs, beaten shopping list
- 1/2 cup butter, melted shopping list
- 2 teaspoons vanilla shopping list
- -optional raisins and brown sugar, I add these when I make them right after school so they can hold them in thier hands and eat them shopping list
How to make it
- In a large bowl, combine the oats, flour, sugar, baking powder, baking soda and salt. In a smaller bowl, combine buttermilk, eggs, melted butter and vanilla.
- After combining, add liquid ingredients all at once to dry ingredients.
- Stir with a fork to blend well.
- Do not over-beat. Let stand 30 to 40 minutes.
- Batter will thicken (if batter is too thick, add more milk, one tablespoon at a time until batter thins).
- Cook on prepared hot griddle.
