Kalamata Meatballs

- 1 lb of ground lamb (could also use turkey, beef, or chicken) shopping list
- 1 dozen kalamata olives, pitted shopping list
- 1/2 c. feta cheese crumbles shopping list
- 2 eggs shopping list
- 2 tbsp dried parsley shopping list
- salt, pepper, garlic powder, thyme and oregano to taste shopping list
How to make it
- Preheat your oven's broiler.
- Combine all of the ingredients. It's really hard to say what constitutes enough spice. I use a dash of everything, smell it, and if it smells good, I start rolling.
- Roll into small meatballs (makes about 20).
- Broil for approximately 7 minutes on each side or until brown and cooked through.
- Serve with grilled vegetables over couscous.
