Kalamata Meatballs Recipe
This recipe was adapted by a good friend of mine from the same dish at The Velvet Hookah (locations in downtown Dallas and Addison, TX).

Ingredients
  • 1 lb of ground lamb (could also use turkey, beef, or chicken)
  • 1 dozen kalamata olives, pitted
  • 1/2 c. feta cheese crumbles
  • 2 eggs
  • 2 tbsp dried parsley
  • Salt, pepper, garlic powder, thyme and oregano to taste

Directions
  1. Preheat your oven's broiler.
  2. Combine all of the ingredients. It's really hard to say what constitutes enough spice. I use a dash of everything, smell it, and if it smells good, I start rolling.
  3. Roll into small meatballs (makes about 20).
  4. Broil for approximately 7 minutes on each side or until brown and cooked through.
  5. Serve with grilled vegetables over couscous.
