VIRGINIA OVEN PORCUPINES This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Olsen Estate in Grand Prairie, Texas in 1982.

Ingredients
  • 1 pound lean ground beef
  • 1/2 cup uncooked regular rice
  • 1/2 cup water
  • 1/3 cup chopped onion
  • 1 teaspoon salt
  • 1/2 teaspoon celery salt
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon pepper
  • 15 ounce can tomato sauce
  • 1 cup water
  • 2 teaspoons Worcestershire sauce

Directions
  1. Heat oven to 350.
  2. Mix meat, rice, water, onion, salts, garlic powder and pepper.
  3. Shape mixture by rounded tablespoons into balls.
  4. Place meatballs in ungreased baking dish.
  5. Stir together remaining ingredients then pour over meatballs.
  6. Cover with foil and bake 45 minutes.
  7. Uncover and bake 15 minutes longer.
