Try this for a different spin on a quick and easy side dish. My family loves it.

Ingredients
  • 2 cups Canned Tomatoes (drained)
  • 3 Hard-boiled Eggs
  • 1/2 cup Mayonnaise
  • 1/2 cup Chopped Celery
  • Chopped Olives
  • Salt (to Taste)
  • Red Pepper (to taste)
  • Zesta Crackers

Directions
  1. Strain as much juice as possible from the tomatoes.
  2. Chop eggs.
  3. Mix all ingredients together.
  4. Add crumbled crackers to absorb any excess liquids.
