My mom used to make gingerbread in an 8 inch baking dish. I have the dish and I love to make gingerbread also.

Ingredients
  • 1 tbsp vinegar
  • 1/4 cup skim milk
  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ginger
  • 1 tsp cinnamon
  • 1/2 tsp cloves
  • 1/2 cup butter, at room temp
  • 1/2 cup sugar
  • 1/4 cup molasses
  • whipped cream for topping

Directions
  1. Preheat oven to 350 degrees. Line thebbottom of an 8 inch square pan with wax paper. grease the paper and the sides of the pan.
  2. Add the vinegar to the milk and set aside. It will curdle.
  3. In mixing bowl, mix all the dry ingredients....mix well.
  4. With mixer, cream the butter and sugar until light and fluffy. beat in egg until well combined.
  5. Stir in molasses.
  6. Fold in dry ingredients in 4 batches, alternating with curdled milk. Mix only enough to blend.
  7. Pour into prepared pan and bake 45-50 minutes.
  8. Cut into squares and serve warm with whipped cream.
