banana and Oat gingerbread

- 1 1/4 cup flour shopping list
- 2 tsp baking soda shopping list
- 2 tsp ginger shopping list
- 1 3/4 cup oatmeal shopping list
- 4 tbsp brown sugar shopping list
- 6 tbsp margarine shopping list
- 2/3 cup corn syrup shopping list
- 1 egg shopping list
- 3 ripe bananas, mashed shopping list
- 3/4 cup powdered sugar shopping list
How to make it
- Preheat oven to 325 degrees
- Grease and line a 7 x 11 inch loaf pan.
- Mix together flour, soda, and ginger. Stir in oatmeal. Melt sugar, margarine, and syrup in a saucepan, then stir into the flour mixture. Beat in egg and mashed bananas.
- spoon into the pan and bake for 1 hour or until firm to the touch. allow to cool in the pan, then turn out and cut into squares.
- Sift the powered sugar into a bowl and stir in just enough water to make a smooth, runny icing. Drizzle the icing over each square and top with a piece of preserved ginger, if desired.
