How to make it

  • Preheat oven to 325 degrees
  • Grease and line a 7 x 11 inch loaf pan.
  • Mix together flour, soda, and ginger. Stir in oatmeal. Melt sugar, margarine, and syrup in a saucepan, then stir into the flour mixture. Beat in egg and mashed bananas.
  • spoon into the pan and bake for 1 hour or until firm to the touch. allow to cool in the pan, then turn out and cut into squares.
  • Sift the powered sugar into a bowl and stir in just enough water to make a smooth, runny icing. Drizzle the icing over each square and top with a piece of preserved ginger, if desired.
