I had some leftovers that needed cooking, so I whipped up this tasty sandwich. It's not haute cuisine, but it sure was tasty. Or, maybe I was just hungry!

Ingredients
  • 1 tbs olive oil
  • 1/2 onion sliced
  • 1 stalk of celery thinly sliced (lenghwise)
  • 1 clove diced garlic
  • pinch of salt
  • 1tbs hummus (use whatever flavor you like)
  • 1 spoonful of cooked white rice (i used some leftover white rice)
  • 1 pita

Directions
  1. Heat the oil over medium heat
  2. Add the onion and cook for a minute or two
  3. Add the celery and garlic and stir
  4. Add the salt
  5. Cook for about 5 minutes, stirring occasionally
  6. Spread the hummus onto a pita
  7. add the celery mixture
  8. add the rice
  9. close the pita, and eat!
