Baked Cod In A Flavoured Tomato Sauce Recipe
This dish can be made spicy or not spicy. Goes perfectly with Basmati or white rice.

Ingredients
  • Cod or Haddock
  • 1/2 lemon
  • 1 can of tomato paste
  • 1 red pepper
  • 1 green pepper
  • One large onion
  • 3 cloves of minced garlic
  • Cilantro
  • sugar
  • salt
  • pepper
  • garlic powder
  • water

Directions
  1. You can use fresh cod slice into fillets or 6 frozen fillets
  2. Defrost in cold water
  3. Wash well and squeeze lemon over the fish
  4. Slice the red pepper, green pepper and onions and sautee until soft
  5. Add 3 cloves of minced garlic
  6. Add 1 can of tomatoe paste
  7. Add 2 1/2 cups of water
  8. Add 1/2 cup of chopped cilantro
  9. Add 1 tsp sugar (to take the acidity away)
  10. Add salt, pepper and garlic powder for taste
  11. Optional: For a spicy sauce: add 1 tbsp of chilli sauce
  12. Stir well and simmer for 5 minutes
  13. Put the fish in a casserole dish
  14. Pour the sauce over the fish
  15. Bake for 30-40 minutes on 350F

This dish was phenomenal! My husband and kids (ages 4 and 8) loved it. You can also use haddock as an alternative fish. Excellent dish. My family licked their fingers!
