How to make it

  • You can use fresh cod slice into fillets or 6 frozen fillets
  • Defrost in cold water
  • Wash well and squeeze lemon over the fish
  • Slice the red pepper, green pepper and onions and sautee until soft
  • Add 3 cloves of minced garlic
  • Add 1 can of tomatoe paste
  • Add 2 1/2 cups of water
  • Add 1/2 cup of chopped cilantro
  • Add 1 tsp sugar (to take the acidity away)
  • Add salt, pepper and garlic powder for taste
  • Optional: For a spicy sauce: add 1 tbsp of chilli sauce
  • Stir well and simmer for 5 minutes
  • Put the fish in a casserole dish
  • Pour the sauce over the fish
  • Bake for 30-40 minutes on 350F

    This dish was phenomenal! My husband and kids (ages 4 and 8) loved it. You can also use haddock as an alternative fish. Excellent dish. My family licked their fingers!
