Baked Cod In A Flavoured Tomato Sauce

- cod or haddock shopping list
- 1/2 lemon shopping list
- 1 can of tomato paste shopping list
- 1 red pepper shopping list
- 1 green pepper shopping list
- One large onion shopping list
- 3 cloves of minced garlic shopping list
- cilantro shopping list
- sugar shopping list
- salt shopping list
- pepper shopping list
- garlic powder shopping list
- water shopping list
How to make it
- You can use fresh cod slice into fillets or 6 frozen fillets
- Defrost in cold water
- Wash well and squeeze lemon over the fish
- Slice the red pepper, green pepper and onions and sautee until soft
- Add 3 cloves of minced garlic
- Add 1 can of tomatoe paste
- Add 2 1/2 cups of water
- Add 1/2 cup of chopped cilantro
- Add 1 tsp sugar (to take the acidity away)
- Add salt, pepper and garlic powder for taste
- Optional: For a spicy sauce: add 1 tbsp of chilli sauce
- Stir well and simmer for 5 minutes
- Put the fish in a casserole dish
- Pour the sauce over the fish
- Bake for 30-40 minutes on 350F
