Hot n Sour Vegetable Soup

- 2/3 C. carrots shopping list
- 1/2 C. chopped onion shopping list
- 2 cloves garlic, minced shopping list
- 3 C. vegetable broth shopping list
- 1 1/2 C. sliced green cabbage shopping list
- 2 cans (14.5 oz each) diced tomatoes (preferably with onions and garlic or basil and oregano) shopping list
- 1/2 C. frozen corn, thawed shopping list
- 1/2 C. cut fresh green beans shopping list
- 1/2 tsp. dried basil shopping list
- 1/4 tsp. dried oregano shopping list
- 1/4 tsp. salt shopping list
- 2 T. balsamic vinegar shopping list
- hot red pepper sauce or red pepper flakes, to taste (optional) (Habenero seeds might make a fair substitute for pepper flakes) shopping list
How to make it
- 1. Coat large saucepan with cooking spray and add carrots, onion, and garlic.
- Cook over low heat until softened, about 5 minutes.
- 2. Add broth, cabbage, tomatoes (with juice), beans, corn, basil, and oregano.
- Bring to a boil. Lower heat and simmer, covered, about 15 minutes.
- 3. Add vinegar. Stir. Add hot pepper sauce or flakes to taste, if using.
- Per cup: 78 calories, 3 g protein, 17 g carbs, 0 g fat, 0 mg chol, 2 g fiber, 880 mg sodium
