Ingredients
  • 1 3/4 c. organic whole wheat flour
  • 3/4 tsp. baking soda
  • 1/4 tsp. sea salt
  • 1/4 c. natural dark brown molasses sugar
  • 2/3 c. organic applesauce
  • 1/4 c. organic olive oil
  • 1/4 c. 100% pure maple syrup or organic honey (depending on your flavor preference)
  • 1/2 tsp. vanilla
  • 2 organic eggs
  • 2/3 c. skim milk
  • 3/4 c. dark chocolate chocolate chips

Directions
  1. Put first 10 ingredients into a large bowl.
  2. Beat with mixer until well blended.
  3. Stir in chocolate chips.
  4. Pour into paper-lined muffins trays.
  5. Bake at 350 F.
  6. *13 minutes for regular sized muffins or 10 minutes for mini-muffins.

Made this last night with my little girl - they are really yummy but the chocolate bits sunk. Any ideas on how to prevent this? I've herd that bits should be dusted with flour beforehand but I have never tried this. Any ideas?
