How to make it

  • Put first 10 ingredients into a large bowl.
  • Beat with mixer until well blended.
  • Stir in chocolate chips.
  • Pour into paper-lined muffins trays.
  • Bake at 350 F.
  • *13 minutes for regular sized muffins or 10 minutes for mini-muffins.

    PG - dusting w flour definitely works, as does using mini chips... the batter was too runny for me first time I made these though, so I cut out the extra syrup and reduced the oil to 2 tbsp for a thicker consistency, the chips stay perfectly then.

    Made this last night with my little girl - they are really yummy but the chocolate bits sunk. Any ideas on how to prevent this? I've herd that bits should be dusted with flour beforehand but I have never tried this. Any ideas?
