How to make it

  • Preheat oven to 375F
  • With a fork, poke 8 to 12 deep holes all over each potato so moisture can escape during cooking
  • Place potatoes on a baking sheet and coat potatoes lightly with cooking spray
  • Sprinkle with kosher salt and place baking sheet directly on rack in middle of oven
  • Bake for 1 hour or until skin feels crisp but flesh beneath feels soft
  • Remove from oven and let cool
  • Once cool to the touch cut a slit down the middle of each potato
  • Serve topped with a dollop of yogurt, some broccoli florets, crumbled bacon and halved cherry tomatoes
